Yann Couvreur pâtisserie announces a € 1.9 million fundraiser

Pastry chef Yann Couvreur has just raised almost 2 million euros. The goal: Accelerate the digital transformation operated by the pastry house, and develop it internationally and in the provinces, as well as opening a new Parisian store.

Passed by renowned restaurants and star palaces, Yann Couvreur opened his first Parisian boutique in 2016. Four years later, the young pastry chef has new ambitions and is about to make his digital transformation 3.0.

Investors from various fields

 

For this first fundraiser, coordinated by Yann Couvreur and his two co-founders – Benjamin Guedj and Jordan Zeitoun – no less than 1.9 million euros were raised. The eleven investors? Varied profiles from very different fields: retail, digital and even finance.

 

All of them wanted to invest in a promising brand, and were chosen by the three co-founders to form a real team. “The idea from the start was to develop a pastry brand, a group. We waited to find our benchmarks and our positioning to raise this fund, and thus ask experts to trust us, ”explains Yann Couvreur.

 

An unprecedented digital transformation

 

Since the opening of his first Parisian boutique in 2016, Yann Couvreur has established himself in the world of pastry in France.

 

He wants to give his talent and his vision a new breath thanks to a 3.0 shift. “You have to adapt to trends using new tools, like applications. We have observed millennials a lot, who have a way of life very different from previous generations, ” confides Yann Couvreur.

 

The concept ? Open “dark labs” everywhere in France. In total, 22 provincial cities are targeted – Lille, to start, in 2020, followed closely by Lyon, Nice or Bordeaux.

 

To buy Yann Couvreur Pâtisseries’ creations, gourmets will have to order on the YC application: in fact, the principle is to opt for a 100% digital offer, with a click & collect principle in workshops as well as mini laboratories, open to the public.

 

Spaces where “master classes” will be organized, in order to share the know-how specific to the pastry chef. A technique widely developed in the ready-to-wear field, but which remains completely new in the pastry industry.

 

A new boutique

 

It is in the 17th arrondissement of Paris, in the heart of the Batignolles, that the next Yann Couvreur Pâtisserie store will be inaugurated.

 

We will find there the flagship creations which made the success of the pastry chef, very followed on social networks (more than 270,000 subscribers): high-end desserts, strong in taste, without coloring and light in sugar.

 

All sold at affordable prices. Enough to increase Parisian clientele: today, no less than 45,000 customers – whose average basket amounts to 10 euros – flock to discover (or rediscover) Yann Couvreur’s creations every month.
