Each year, the ranking of the world’s best establishments is established thanks to an algorithm that takes into account the scores of the gastronomic guides, the opinions of the press and the satisfaction of customers around the world. The 2023 podium is dominated by Paris, New York and Stockholm.
For the first time, a trio of restaurants share first place in the Top 1000 La liste 2023. They win the very prestigious distinction of Best Restaurant in the World.
In Paris, Guy Savoy retains its title for the sixth time. Éric Ripert’s restaurant, Bernardin, which is celebrating its 25th anniversary in New York, is also first. And a Nordic wave reaches the top of the podium this year thanks to the three-starred Frantzén restaurant, run by chef Björn Frantzén.
The ranking then also shows a number of restaurants in a tie. In second place are two French restaurants, including Arnaud Lallement’s Assiette Champenoise and Arnaud Donckele’s Vague d’or, whose recent Parisian restaurant Plénitude is also in third place. The latter has thus gained 45 places compared to last year. Note that Les Près d’Eugénie, under the leadership of Michel Guérard, has risen to 5th place this year instead of 6th last year.
Many closures
Other notable developments include the fact that of the 30,000 restaurants listed in 2021 by La Liste, nearly 4 000 closed their doors in 2022, compared to a few hundred in normal times. In France, the sector has been rather well protected, thanks in particular to the reputation of its prestigious establishments and to more protective public authorities. On the other hand, the pandemic has clearly affected the restaurant sector in countries such as Thailand, Vietnam, Cambodia, Australia and Israel.
Women in the spotlight
This year, four women chefs’ establishments made it into the Top 50. Clare Smyth won twice for her restaurants Core by Clare Smyth in London (1st in England ex-aequo) and Oncore in Sydney (1st in Australia ex-aequo). Elena Arzak’s eponymous restaurant in San Sebastian and the restaurant of French chef Anne-Sophie Pic (4th ex-aequo) in Valencia also won.
The special prizes
As important as the ranking, the 11 Special Prizes La Liste reward commitment, audacity, the ability to reinvent oneself and to carry the values of tomorrow’s world gastronomy. The class of 2023 includes 34 laureates from 19 countries. Among them, 10 winners are French and 14 are women, owners and/or chefs.
In France, these awards honor professionals such as Arnaud Lallement for Ethical and Environmental Responsibility with Assiette Champenoise, Roxane and Jean Sévègnes of Café des Ministères for the Authenticity and Craftsmanship Award, and the city of Lyon for the New Gastronomic Destination Award.
Michel Guérard, guest of honor
The Top 1000 2023 will be celebrated this evening during a ceremony presented by Julie Andrieu, at the Quai d’Orsay. A tribute will be paid to Michel Guérard, father of Nouvelle Cuisine, who trained some of the greatest names in French cuisine. He will receive an Honorary Prize and will be surrounded by his greatest students: Alain Ducasse, Daniel Boulud, Arnaud Donckele, Arnaud Lallement, Laurent Petit and many others.
