Ritz-Carlton partners with Biogreen 360 and Garick to recycle its food waste

The Ritz-Carlton, Pentagon City luxury hotel is taking another step toward sustainability by recycling its food waste.

 

BioGreen360, a leading innovator of food waste management solutions, announced the successful completion of a six-month collaboration with The Ritz-Carlton, Pentagon City Hotel and Garick. The program developed sought to divert 100% of the hotel’s food waste to produce all-natural compost.

 

The collaboration was conducted at The Ritz-Carlton, Pentagon City Hotel, leveraging BioGreen360’s innovative integrated technology solution including waterless distributed digester technology, proprietary biocatalysis, and a real-time data analysis package. Since the beginning of the collaboration, the Pentagon City Hotel has successfully reclaimed 100% of its food waste, or more than 10 tons. The hotel’s culinary staff was able to use the real-time data provided by the system to identify departments that were producing waste and reduce it as they went.

 

The organic material was then turned into all-natural compost at Garick’s New Milford facility. Through this collaboration, the Pentagon City Hotel has not only repurposed 100% of its food waste, but is also allowing it to become a valuable sustainable natural resource through an environmentally friendly and fully circular process.

The BioGreen360 solution allows us to be more efficient in the kitchen,” said Executive Chef Phil Skerman. “By tracking where waste is created, we are able to streamline our preparation to ensure that as little food as possible is wasted, and that the waste we create is then turned into fertilizer instead of being added to landfills.
