Mumm selects Mallory Gabsi as its first chef in residence

Already a Michelin-starred chef and named Young Chef of the Year by Michelin in 2023, the young Belgian prodigy will inaugurate the Table des Chefs in Reims, a new restaurant concept from the famous Champagne House. The Latvian Raimonds Tomsons, World’s Best Sommelier 2023, will sign the champagne and wine list of this place where young talented chefs will succeed one another each season.

In fashion, we know about pop ups and collab’ with prominent designers such as those established by Jean-Paul Gaultier.

 

The idea has now been revisited for fine dining by Mumm Champagnes, which has just announced the creation in Reims of the Table des Chefs, “an innovative concept of gastronomic catering based on the model of artists’ residences”. The idea? “To have young chefs from different backgrounds take turns each season to offer a plural and inventive cuisine to local and visiting gourmets”.

To inaugurate it for three months, starting on 12 May, the almost bi-centennial Champagne House has chosen a young but already well-known cooking prodigy, the Belgian Mallory Gabsi.

 

The Latvian Raimonds Tomsons, who has just been awarded the title of World’s Best Sommelier 2023, has been entrusted with the task of signing the champagne and wine list of the Table des Chefs throughout the year.

 

Under the sign of the star

 

Having worked in some of Belgium’s finest Michelin-starred restaurants and after a notable participation in Top Chef in France, Mallory Gabsi opened his first restaurant in March 2022, near the Place de l’étoile in Paris. A premonitory location since only one year later, at only 26 years old, he was awarded a star by the Michelin Guide along with the title of Young Chef of the Year.

 

Mallory Gabsi will thus kick off the culinary explorations of La Table des Chefs. Based in the Maison Mumm mansion, it will be possible to have lunch or dinner, or to share more casual dishes on the terrace overlooking the garden. A brunch will also be offered on Sunday, for the first time in Reims.

The “guiding principle” is similar to that of the young chef’s Parisian restaurant: “excellence in execution, respect for the origin of the products”.

 

By calling on the combined talents of Mallory Gabsi and Raimonds Tomsons, Mumm champagnes should definitely succeed in raising the profile of its new concept.
