Gastronomy: the best restaurant in the world closes to reinvent itself

Noma, the best restaurant in the world, located in Copenhagen, Denmark, has announced that it will close its doors at the end of 2024. Held by the chef René Redzepi, he justified this decision by invoking the non-viability of a traditional project nowadays and a strong desire to renew itself. Welcome to Noma 3.0.

 

“Winter 2024 will be the last season of Noma as we know it. We are starting a new chapter: Noma 3.0”. This is what it says on the website of the world’s best restaurant, Noma. For more than 10 years, this restaurant located in the Danish capital has earned its reputation by winning three Michelin stars and its first place in the ranking of the 50 best restaurants in the world. Noma creates original and innovative Nordic cuisine, frequently changing its menu through the work of its in-house culinary research and development team. On January 9, Lebanese-born Danish chef and Noma co-owner René Redzepi announced an imminent and significant transition with the restaurant closing its doors as we know it in the winter of 2024. “In 2025, our restaurant will transform into a giant laboratory – a pioneering test kitchen dedicated to working on food innovation and developing new flavors”, the Noma team explains on the restaurant’s website.

 

A traditional gastronomic format that is no longer viable

 

The decision to focus from 2025 on traveling pop-ups and culinary innovation, turning Noma into a true laboratory, is symptomatic of a shift in fine dining. Since the pandemic, many chefs have rethought their concept to adapt to a changing world. René Redzepi, for one, has acknowledged that Noma’s fine dining is not sustainable, both in terms of economics and profitability, and in terms of the company’s environmental impact. This is a problem with fine dining, with the rising costs of industry and personnel, combined with the psychologically and physiologically harsh, high-intensity working conditions. René Redzepi has been criticized for abusing the work of unpaid interns. To address this sustainability crisis, the chef wants to put employee well-being back at the center of his policy and implement new culinary innovation techniques.

 

A sustainable business model?

 

The Noma 3.0 project could eventually spark a wave of transformation in fine dining. The focus on innovation seems to have worked for other culinary research and development labs, such as The Cooking Lab (publisher of Modernist Cuisine and other books and media) and Chew Innovation (a food development consulting firm). However, this new business model must be both consistent and efficient in producing high-quality food in order to be sustainable and continue to be monetized. It is well known that in the kitchen, innovation is only protected by secrecy and usually has a short shelf life. It remains to be seen whether Noma 3.0 will be able to master its subject.
